Welcome to a new month and a new focus for our INVESTing. This month is going to be fun and challenging. I hope you are ready.

This month we are Investing in ourselves, our families, our health. The focus for this month is Healthy Eating!
Listen, we may as well do it now because you know we have all the candy for October, the Thanksgiving food of November and the Christmas treats for December just around the corner. So this can be like a little reset for us and maybe get us in good stead for the months ahead.
I am not going to try to tell you what is healthy because I think we all have different things we need to work on. Personally, I love sweets and breads……if you give me a good sweet bread like a doughnut or cinnamon roll that is truly perfect.
So I am going to try to do better in that area. Also, since I was working from home so much I would treat myself to a fast food lunch on the day I had to go into the office. Well now we are going back several days and I have got to come up with some healthier lunch options.
One of the easiest, quickest and healthier dinners I make is simply baking some Salmon and serving it with a small salad or green vegetable. I usually make it two ways, one is putting the Salmon on a foiled lined baking sheet and spreading jarred pesto over it. The other way is to sprinkle Chef Paul Prudhomme’s Magic Seafood Seasoning on top of it. I usually bake it at 400 degrees for 20-24 minutes depending on the size of the fillets.
I will also make Tilapia by putting several fillets on a baking sheet and sprinkling on Taco Seasoning mix. After baking the fillets at 375 for 20 or so minutes I flake them and either make a fish taco with all the fresh toppings or just serve the fish with black beans and corn. We do love a good mango salsa around here…..some fresh diced mango with some finely diced seeded jalepeno, red bell pepper, red onion and lime juice – yes, please and thank you!
So think about what you can do to Invest in your healthy eating – reduce sugar, reduced sodium, less carbs, more protein, more veggies. Whatever it is, give some intentional focus.
