I hope you had a great weekend. We had like a whole weekend of celebrations. Friday we went to the Trash Panda’s baseball game, Juneteenth on Saturday and then Sunday was Father’s Day and our 29th wedding anniversary. Obviously, a big weekend. We kept all celebrations fairly low key because we are saving for some bigger things. My husband decided this was the year he would buy this grill he has been wanting so that was his big Father’s Day gift. So we just got him a couple of smaller presents. We agreed to not buy each other Anniversary presents because we have a kitchen remodel we are trying to get done………a remodel we have been trying to get done for 8 months. We still haven’t found someone to do the whole job, but we finally got someone to agree to price our cabinets. Honestly, if you know someone who is good and willing, please send them our way. Me being a person of my word, bought my husband nothing. He bought me some beautiful roses and 4 bags of my favorite candy – French Burnt Peanuts, Maple nut Goodies and Twizzlers and a new novel. What can I say? I’m a lifelong rule follower, we said no gifts.
So anyway, back to this two ingredient magic. For our Father’s Day/Anniversary meal I made one of our family’s favorites. I usually cook some kind of fish on Sundays and this Sunday was no exception. I bought a huge piece of salmon on Saturday and a jar of pesto sauce.

Literally just slather the salmon all over with the pesto and bake it at 375 degrees for 20-25 minutes (depending on the size of your salmon) or until done.
Seriously, this and a salad and you are good to go. I make salmon all kinds of ways. Sometimes I use the prepared salmon seasoning from the grocery store and squeeze on some lemon. Sometimes I use honey and brown sugar. But the pesto salmon is our favorite.
